Ukdi Modak Recipe

In India the season is so festive right now, right about now is a beautiful time of the year. This is the time for minor and major festivals to be celebrated in various Indian communities. Now a days Ganesh Chaturthi festival is going on. We celebrate this 10 to 12 day long festival every year. It is one of the most joyous events of the years in the states of Maharashtra.

Lord Ganesha has always been pictured with a sweet in his hands.  There are a variety of sweets made on this occasion, one of the most popular sweets in this is Modak. Modak is said to be Ganesha’s favourite sweet.

Today I came up with the recipe of Ukdi Modak.

Ingredients for Ukdi Modak Recipe

Rice flour 1 1/2 cups

Salt a pinch

Oil 1 teaspoon for greasing

For stuffing

Fresh coconut grated 1 1/2 cups

Jaggery (gur) grated 1 cup

Poppy seeds (khuskhus/posto) roasted 1 tablespoon

Green cardamom powder a pinch

Nutmeg powder a pinch

Method

Step 1

Heat one and one-fourth cup of water with salt and one teaspoon oil in a deep non-stick pan.

Step 2

Bring to a boil, reduce heat, and add the rice flour, stirring continuously to prevent chunks from forming. Cover the pan with deep lid and pour some water into the lid. Cook on low heat for three minutes.

Step 3

Remove the lid, sprinkle some cold water on the rice flour and cover again with the lid bring to a boil, reduce heat, and add the rice flour, stirring continuously to prevent chunks from forming water in it, cook for another three minutes. Repeat this process twice. Take the pan away the heat and keep it covered for two minutes.

Step 4

Transfer the mixture to a plate, grease the palms of your hands with oil and knead the dough till completely smooth. The dough should not stick to your palms. Rest the dough covered with a damp cloth.

Step 5

For stuffing, combine the coconut and jaggery in a non-stick pan and cook on medium heat for one or two minutes till light golden brown. Do not overcook the mixture. Add the roasted poppy seeds, cardamom powder.

Step 6

Divide the dough in ten equal portions and shape them into balls. Grease the palms of your hands and spread each ball to form a bowl. Press the edges of the bowls to minimize the thickness.

Step 7

Place a portion of the stuffing in the centre, pleat the edges of the dough and gather them together to form a bundle. Pinch to seal the edges at the top.

Step 8

Heat sufficient water in a steamer. Place the modak in a plate in the steamer and steam for ten to twelve minutes.

Step 9

Serve hot modak with pure ghee.

Allahabad Ki Tahiri Recipe

Allahabad Ki Tahiri is a delicious one pot rice meal which originate in Uttar Pradesh. It is an aromatic , spiced one pot rice and vegetable based dish.

Cook time : 16-20 minutes

Ingredients for Allahabad Ki Tahiri Recipe

Basmati rice parboiled 2 1/2 cups

Red lentils split soaked and half cooked 2 1/2 cups

Ghee 3 tablespoons

Butter 2 tablespoons

Cinnamon 2 inches

Cloves 2-3

Bay leaves 2

Dried red chillies 2

Onion sliced 1 small

Garlic finely chopped 1 tablespoon

Ginger-green chilli paste 2 tablespoons

Green capsicum finely chopped 1/4

Green peas boiled 2 tablespoons

Carrot boiled 1 small

Tomatoes pureed 2 medium

Gatte 1/4 cup

Red chilli powder 2 tablespoons

Turmeric powder 1 1/2 tablespoons

Salt to taste

Fenugreek powder 1 tablespo

Coriander powder 2 tablespoons

Chaat masala 1 teaspoon

Onion sliced 1 teaspoon

Dried fenugreek leaves (kasoori methi) a pinch

Cashewnuts fried 7-8

Method

Step 1

Heat 1 tablespoon ghee and 1 tablespoon butter in a handi. Add broken cinnamon, cloves, torn bay leaves, broken dried red chillies and onions.

Step 2

Sauté till onions are well browned. Add garlic and sauté for 1 minute. Add 1 tablespoon ginger-green chilli paste and mix and sauté for 1 minute.

Step 3

Add capsicum, green peas and carrot then sauté for 2 minutes. Add pureed tomatoes, mix and add gatte. Mix and cook for 2 minutes.

Step 4

Add 1 cup masoor dal, mix and cook for 1 minute. Add 1 tablespoon red chilli powder, 1 tablespoon turmeric powder, salt and mix. Add 1½ cups rice and mix well.

Step 5

Add 1 tablespoon fenugreek powder and mix well. Cook for 1 minute. Remove from heat and set aside. Heat remaining butter and 2 tablespoons ghee in a non-stick pan.

Step 6

Add remaining ginger and green chilli paste then sauté for 1 minute. Add remaining dal, remaining red chilli powder, remaining turmeric powder, coriander powder, ½ teaspoon fenugreek powder and chaat masala. Mix well and cook for 2 minutes.

Step 7

Apply 1 ½ teaspoon ghee on the base of another handi. Spread a layer of 1 cup white rice, ½ a layer of cooked dal mixture and lastly a layer of ½ of the cooked rice.

Step 8

Spread other portion of white rice, top with a layer of remaining cooked dal mixture and lastly remaining cooked rice layer. Spread remaining white rice on top, cover and cook for 2 minutes.

Step 9

Switch off heat, open lid and press lightly. Transfer tahiri in a serving dish. Garnish with fried onions, dried fenugreek leaves, chopped coriander leaves and fried cashew nuts. Serve hot.

Ingredients for Handvo Recipe

Rice 1 cup

Split Pigeon Pea 1/2 cup

Split green gram skinless 1/4 cup

Split Bengal gram (chana dal) 2 tablespoons

Whole black gram (sabut urad) 2 tablespoons

Sour yogurt 1/2 cup

Oil 5 tablespoons

Salt to taste

Sugar 2 tablespoons

Turmeric powder 1/2 teaspoon

Red chilli powder 2 tablespoons

Carrot grated 1 medium

Cabbage shredded 1/4 small

Bay leaves 2

Dried red chillies 2

Asafoetida a pinch

Cloves 2

Mustard seeds 2 tablespoons

Curry leaves 8-10

Soda bicarbonate 2 tablespoons

Lemon juice 1 tablespoon

Sesame seeds (til) 3 tablespoons

Method

Step 1

Soak the rice with all the dals in 5 cups of water for 2 hours. Drain. Grind the rice to a coarse paste and add enough water to make a batter of medium thick consistency.

Step 2

Mix in the yogurt. Cover the batter and leave to stand in a dark place for 2-3 hours to ferment.

Step 3

Preheat oven at 180° C. For the tempering heat oil in a non stick pan.

Step 4

Add salt, sugar, turmeric powder, red chilli powder, carrot, cabbage to the batter and mix well. Add bay leaves to the oil.

Step 5

Chop red chillies and add to the pan along with asafoetida, red chillies, cloves, mustard seeds and curry leaves. Add soda, lemon juice and the tempering to the batter and mix well.

Step 6

Pour the batter into greased spring form cake tin, sprinkle sesame seeds on top and bake in the preheated oven for 1 hour or till the crust is deep golden. Cut into wedges and serve.

Mushroom Butter Masala Recipe

The Mushroom Butter Masala is an excellent dish especially if you like mushroom and have an Indian food loving plate. Smooth buttery gravy, and the soft texture of mushroom is what makes this dish a treat. It is best consumes with jeera rice, rotis, naan or biryani rice.

I made this couple days back and served with pulao, it turned out to be really delicious.

Ingredients for Mushroom Butter Masala Recipe :

Mushrooms halved 20

Butter 4 tablespoons

Cinnamon 2 Stick

Cloves 3

Green cardamoms 4

Onions, sliced 3 medium

Salt to taste

Ginger paste 1 teaspoon

Garlic paste 1 teaspoon

Tomato sliced 1 large

Kashmiri red chilli powder 1 tablespoon

Turmeric powder 1/2 teaspoon

Kasoori methi 2 teaspoons

Salt to taste

Cashewnut paste 3 tablespoons

Sugar 1/2 teaspoon

Fresh cream 1/4 cup

Butter 1 tablespoon

Method :

Step 1

Heat three tablespoons oil in a non stick pan. Add cinnamon, cloves and cardamoms. Sauté for half minute.

Step 2

Add onions, salt and sauté till onions are soft. Add ginger paste, garlic paste and sauté for two minutes.

Step 3

Add tomato, turmeric powder, chilli powder, kasuri methi. Mix well and cook on medium heat for eight to ten minutes.

Step 4

Allow to cool and grind to a fine paste with sufficient water.

Step 5

Heat remaining oil in a non stick pan.

Step 6

Add the mushrooms, salt and cook on high heat till the moisture evaporates and mushrooms are cooked.

Step 7

Add the masala paste and half cup water. Mix well.

Step 8

Add cashew nut paste, sugar and mix. Cook on low heat for five minutes.

Step 9

Add fresh cream, butter and mix well. Serve hot.

Paneer Lasooni

Paneer Lasooni is a perfect combination of great food that is also healthy and nutritious.

Prep Time : 1.30-2 hour

Cook time : 16-20 minutes

Ingredients for Paneer Lasooni Recipe :

Paneer  1 inch cubes 800 grams

Garlic chopped 12-15 cloves

Yogurt 1 cup

Ginger-garlic paste 1 tablespoon

Lemon juice 1 tablespoon

Garam-masala powder 1 teaspoon

White pepper powder 1 teaspoons

Salt to taste

Saffron soaked in milk 1 pinch

Gram flour roasted 1 tablespoon

Cumin powder 1 teaspoon

Oil 1 tablespoon

Cream 1 tablespoon

Turmeric powder 2 pinch

Cumin seeds 1 teaspoon

Method :

Step 1

For the marinade mix hung yogurt, ginger-garlic paste, lemon juice, garam masala powder, white pepper powder, salt, saffron milk, roasted gram flour, cumin powder, one teaspoon oil, cream and turmeric powder.

Step 2

Add the paneer pieces let them marinate for an hour. Heat the remaining oil in a pan, add the cumin seeds and sauté till fragrant. Add garlic and sauté till garlic is light brown.

Step 3

Add the paneer pieces along with the marinade and toss till the marinade is cooked. Serve hot with rotis.

Phirni Recipe

A Phirni is a Creamy and grainy at the same time, it is the perfect dessert to complete a grand meal. Rough rice paste cooked in milk flavoured with sugar, cardamom powder and saffron till thick. Garnished with pistachios phirni is best served chilled. It is one of the Indian desserts that is not excessively sweet and that is my favourite part about it

Cook Time : 20-25 Minutes

Ingredients for Phirni Recipe

Rice soaked 5 tabelspoons

Milk 1 Lit.

Saffron a pinch

Sugar ¾ cup

Green cardamom powder ½ teaspoon

Pistachios blanched, peeled and sliced 10-15

Method :

Step 1

Drain and grind the rice to a rough paste. Bring milk to a boil. Add rice paste dissolved in a small amount of water or cold milk.

Step 2

Cook till rice is completely cooked, stirring constantly then add saffron and mix well.

Step 3

Add sugar , cardamom powder and cook till sugar is completely dissolved. Pour into earthenware or china bowls and garnish.

Step 4

Chill in a refrigerator for half an hour before serving.

Today I am sharing the recipe of Cold Coffee.

A Sip of cold coffee is a refreshment. Cold Coffee has always been my favorite drink to order in hotels and cafes.

Ingredients for chocolate cold coffee recipe :

Nescafe (3 table spoons)

Milk 2 Cups

Milk Powder 3 Table Spoons­­

Ice cubes as required

Chocolate 2 scoops

Powdered sugar 3 table spoons

Chocolate sauce 1 teaspoon

Method :

Step 1

Place two shots of Nescafe Classic in a blender jar.

Step 2

Add powdered sugar, ice cubes, milk powder and half a cup of water and blend till well mixed and frothy.

Pour into a mug and serve.

Step 3

Alternatively add vanilla ice cream, milk and chocolate sauce and blend till well mixed. Pour into a stemmed glass and serve immediately.
